With the cold weather really setting in here on the East Coast, thought it would be a good time to add another recipe for hot, healthy, fast food. Here is my spinach and chick pea (garbanzo bean) recipe. This dish is a quick source of protein, vitamin A, and iron (fe).
Prep time: 5-10 minutes
Cook time: 5 minutes
½- ¾ lbs of Spinach (organic if possible; if not, wash well… actually, either way, wash well)
8 oz of chick peas (garbanzo beans)
1-3 mushrooms (whatever type you like)
¼ yellow onion
2 tbsp coconut oil
¼ tsp sea salt
a few shakes of cayenne pepper
a few shakes of black pepper
Add coconut oil to the pan and let warm up for 1 minute. Add the spices, and push around with a spatula for another 30 seconds. Add the onions and mushrooms and stir around for another 30 seconds. Add chick peas and stir around for 1 minute. Add spinach and stir up until it looks yummy. Then eat.
